Lebanese Tabbouleh

Tabbouleh is a vibrant and refreshing salad that hails from Lebanon, known for its bold flavors and nutritious ingredients. This salad is a perfect balance of fresh parsley, mint, tomatoes, and bulgur wheat, all brought together by a tangy lemon and olive oil dressing. Ingredients:

  • 1/2 cup fine bulgur wheat
  • 2 bunches of fresh parsley, finely chopped

  • 1/4 cup lemon juice (adjust to taste)
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • Romaine lettuce leaves for serving (optional)

Instructions:

  1. Prepare the bulgur: In a small bowl, soak the bulgur in hot water for about 15 minutes or until softened. Once tender, drain any excess water and set aside.
  2. Chop the herbs and vegetables: Finely chop the parsley and mint leaves, making sure they are washed and dried thoroughly before chopping. Dice the tomatoes and onions as well.
  3. Mix the ingredients: In a large mixing bowl, combine the softened bulgur, parsley, mint, tomatoes, and onions. Toss everything together gently.
  4. Dress the salad: Add the lemon juice and olive oil to the salad. Season with salt and pepper, and toss to coat evenly. Adjust the lemon juice, olive oil, and seasoning to taste.
  5. Serve: Allow the tabbouleh to sit for about 15 minutes to let the flavors meld together. Serve chilled or at room temperature, accompanied by Romaine lettuce leaves if desired.
