Ingredients:

  • 1 package (14 oz) chocolate sandwich cookies, crushed
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tsp peppermint extract
  • 2 cups whipped topping (like Cool Whip), divided
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups milk
  • 1/2 cup crushed candy canes, plus extra for garnish
  • Optional: red food coloring

Instructions:

  1. Prepare the crust:
In a medium bowl, combine the crushed chocolate sandwich cookies with the melted butter. Press the mixture into the bottom of a 9×13-inch baking dish to form an even crust. Place in the refrigerator to chill while you prepare the filling.
  2. Make the peppermint cream layer:
In a large mixing bowl, beat together the softened cream cheese, powdered sugar, and peppermint extract until smooth and creamy. Gently fold in 1 cup of whipped topping. If desired, add a few drops of red food coloring to give the layer a light pink color. Spread the peppermint cream mixture evenly over the chilled crust.
  3. Prepare the pudding layer:
In a separate bowl, whisk together the instant vanilla pudding mix and milk for 2 minutes, or until it starts to thicken. Spread the pudding mixture over the peppermint cream layer.
  4. Add the whipped topping layer:
Spread the remaining 1 cup of whipped topping evenly over the pudding layer.
  5. Garnish:
Sprinkle the crushed candy canes over the top of the dessert for a festive touch.
  6. Chill and serve:
Refrigerate the dessert for at least 2 hours or until fully set. Before serving, garnish with additional crushed candy canes if desired. Slice into squares and enjoy!

This dessert can be made a day in advance, making it a convenient and impressive treat for your holiday festivities.
