Lasagna Stuffed Spaghetti Squash

This Lasagna Stuffed Spaghetti Squash is a delicious, low-carb twist on the traditional lasagna. By using roasted spaghetti squash as the “noodles,” you get the comfort of a cheesy lasagna without the heaviness of pasta. Ingredients:

  • 2 medium spaghetti squash
  • 1 lb ground beef (or Italian sausage)
  • 1 cup marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C). Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper. Place the squash halves cut side down on a baking sheet and roast for 30-40 minutes, or until the flesh is tender and easily shredded with a fork.
  2. While the squash is roasting, cook the ground beef in a large skillet over medium heat until browned, breaking it up as it cooks. Drain excess fat, then stir in the marinara sauce, oregano, basil, garlic powder, red pepper flakes, salt, and pepper. Simmer for 5-7 minutes.
  3. Prepare the ricotta mixture by combining the ricotta cheese, salt, pepper, and a sprinkle of oregano in a small bowl. Set aside.
  4. When the squash is done, remove from the oven and allow to cool slightly. Using a fork, shred the flesh into spaghetti-like strands, but leave the squash in the shells.
  5. Assemble the lasagna: Spread a layer of the ricotta mixture inside each squash half, followed by a layer of the meat sauce. Top each half with shredded mozzarella and grated Parmesan.
  6. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
