Lasagna Casserole

This Lasagna Casserole is a hearty and satisfying twist on the classic Italian dish, offering all the beloved flavors of traditional lasagna with a bit less effort. Instead of meticulously layering ingredients, everything is mixed together in one casserole dish for a simpler but equally delicious meal. Ground beef, rich tomato sauce, tender pasta, and a blend of creamy ricotta, mozzarella, and Parmesan cheeses come together to create a comforting dish that’s perfect for a family dinner or a potluck. It’s a quick and easy option when you’re craving the lasagna experience but don’t have the time for all the layers.

Ingredients:

  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (24 oz) jar of marinara sauce
  • 1 (15 oz) container ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 10 oz lasagna noodles, broken into pieces
  • 2 cups water or beef broth
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Cook the Beef: Preheat the oven to 375°F (190°C). In a large skillet over medium heat, heat the olive oil and cook the ground beef or sausage, breaking it into small pieces. Add the diced onion and garlic, cooking until the meat is browned and the onions are soft, about 5-7 minutes. Drain any excess fat.
  2. Add the Sauce: Stir in the marinara sauce and season with salt and pepper. Let the sauce simmer for 5 minutes to blend the flavors.
  3. Prepare the Ricotta Mixture: In a medium bowl, combine the ricotta cheese, 1 cup of the mozzarella cheese, Parmesan cheese, and egg. Mix until smooth and set aside.
  4. Assemble the Casserole: In a large casserole dish, spread half of the broken lasagna noodles in an even layer. Spoon half of the meat sauce over the noodles, followed by dollops of the ricotta mixture. Repeat the layers, using the remaining noodles, meat sauce, and ricotta.
  5. Add Liquid and Bake: Pour the water or beef broth around the edges of the casserole dish, ensuring it covers the noodles. Cover the dish with foil and bake for 30 minutes.
  6. Top with Cheese: After 30 minutes, remove the foil, sprinkle the remaining 1 cup of mozzarella cheese over the top, and return the casserole to the oven. Bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  7. Serve: Let the casserole cool for 5-10 minutes before serving. Garnish with fresh basil or parsley, if desired.

Enjoy this cozy, family-friendly meal with a green salad or garlic bread!
