Ingredients:
- 1 ½ lbs lamb shoulder, cut into chunks
- 1 large onion, sliced
- 2 carrots, peeled and sliced
- 4 cups beef or lamb broth
- 2 tbsp flour
- 2 tbsp butter
- 4-5 medium potatoes, peeled and thinly sliced
- 2 tbsp fresh thyme leaves (or 1 tsp dried thyme)
- 1 bay leaf
- Salt and pepper to taste

Instructions:
- Preheat your oven to 325°F (160°C).
- In a large, ovenproof casserole dish, melt the butter over medium heat. Add the lamb chunks and brown them on all sides, seasoning with salt and pepper. Remove the lamb and set aside.
- In the same dish, add the sliced onions and carrots, cooking for 5-7 minutes until softened. Sprinkle in the flour and stir for another minute to coat the vegetables.
- Return the lamb to the dish, add the thyme and bay leaf, and pour in the broth. Stir everything together, bring to a simmer, and cook for 10 minutes to allow the flavors to meld.
- Arrange the potato slices on top of the lamb mixture, overlapping them slightly like shingles. Brush the top of the potatoes with olive oil or melted butter, and season with salt and pepper.
- Cover the dish and place it in the oven. Bake for 1 ½ to 2 hours, until the lamb is tender and the potatoes are cooked through. For a crispy top, uncover the dish during the last 20 minutes of cooking.
