Lamb Kofta Kebabs

Lamb Kofta Kebabs are a delicious Middle Eastern dish made with ground lamb, aromatic spices, and fresh herbs, shaped into skewers and grilled to perfection. Ingredients:

  • 1 pound ground lamb

  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Wooden or metal skewers

Instructions:

  1. Prepare the Mixture: In a large mixing bowl, combine the ground lamb, grated onion, garlic, parsley, mint (if using), cumin, coriander, cinnamon, smoked paprika, cayenne (if desired), salt, and pepper. Mix well until evenly combined.
  2. Shape the Kebabs: Divide the mixture into 6–8 portions. Using your hands, shape each portion into a long oval or cylindrical shape around a skewer. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  3. Chill the Kebabs: Place the skewers on a tray and refrigerate for 20–30 minutes. This helps them hold their shape while cooking.
  4. Cook the Kebabs: Preheat a grill, grill pan, or broiler to medium-high heat. Brush the kebabs lightly with olive oil. Grill for 3–4 minutes per side, turning occasionally, until the lamb is cooked through and slightly charred.
  5. Serve: Remove the kebabs from the heat and let them rest for a couple of minutes. Serve hot with pita bread, tzatziki sauce, and a side of fresh vegetables or salad.
