Ingredients:

  • For the marinade:
    • 1 lb (450g) beef sirloin or flank steak, thinly sliced
    • 2 tbsp soy sauce
    • 1 tbsp cornstarch
    • 1 tsp sesame oil
  • For the sauce:
    • 3 tbsp soy sauce
    • 1 tbsp hoisin sauce
    • 1 tbsp rice vinegar
    • 2 tsp sugar
    • 1 tsp cornstarch
    • 2 tbsp water
  • For the stir-fry:
    • 2 tbsp vegetable oil, divided
    • 6-8 dried red chilies, cut into halves
    • 2 garlic cloves, minced
    • 1-inch piece of ginger, minced
    • 1 bell pepper (red or green), diced
    • 1/2 cup unsalted roasted peanuts
    • 2 green onions, sliced
    • 1 tsp Sichuan peppercorns (optional, for authentic flavor)

Instructions:

  1. Marinate the beef: In a bowl, combine the sliced beef, soy sauce, cornstarch, and sesame oil. Mix well and let it marinate for at least 20 minutes.
  2. Prepare the sauce: In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sugar, cornstarch, and water. Set aside.
  3. Stir-fry the beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef and cook for 2-3 minutes until browned but not fully cooked through. Remove and set aside.
  4. Cook the aromatics and vegetables: In the same skillet, heat the remaining tablespoon of oil. Add the dried chilies, Sichuan peppercorns (if using), garlic, and ginger. Stir-fry for 30 seconds until fragrant.
  5. Add the vegetables and peanuts: Toss in the diced bell pepper and stir-fry for 2 minutes. Add the roasted peanuts and cook for another minute.
  6. Combine and finish: Return the beef to the skillet. Pour the prepared sauce over the mixture and stir well. Cook for 2-3 minutes until the beef is fully cooked and the sauce thickens.
  7. Garnish and serve: Sprinkle the sliced green onions on top and serve hot with steamed rice.
