Ingredients:

For the Shrimp Boil:

  • 2 lbs large shrimp, peeled and deveined (leave tails on for easy eating)
  • 1 lb baby potatoes, halved
  • 3 ears of corn, cut into thirds
  • 1 lb andouille sausage, sliced into rounds
  • 1 lemon, halved
  • 3 cloves garlic, smashed
  • 1/4 cup Old Bay seasoning
  • 1 bay leaf
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

For the Key Lime Mustard Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh Key lime juice (or regular lime juice)
  • 1 tsp honey
  • 1/4 tsp garlic powder
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Boil:
    • Fill a large pot with about 8 cups of water. Squeeze the juice from the halved lemon into the water, then add the lemon halves, garlic, Old Bay seasoning, and bay leaf. Bring the mixture to a boil over high heat.
  2. Cook the Vegetables and Sausage:
    • Once the water is boiling, add the baby potatoes and cook for about 10 minutes, or until they start to become tender. Add the corn and sliced andouille sausage to the pot and continue to boil for another 5 minutes.
  3. Add the Shrimp:
    • Add the shrimp to the pot and cook for 3-4 minutes, or until they turn pink and opaque. Be careful not to overcook the shrimp. Drain the entire mixture using a large colander and transfer the shrimp, potatoes, corn, and sausage to a large serving platter.
  4. Make the Key Lime Mustard Sauce:
    • In a small bowl, whisk together the mayonnaise, Dijon mustard, Key lime juice, honey, garlic powder, salt, and black pepper until smooth. Adjust seasoning to taste.
  5. Serve:
    • Garnish the shrimp boil with chopped fresh parsley and additional lemon wedges. Serve with the Key Lime Mustard Sauce on the side for dipping.
