Keto Mashed Cauliflower

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or chives

Instructions:

  1. Steam the Cauliflower:
    In a large pot, bring water to a boil and place a steamer basket on top. Add the cauliflower florets and steam until tender, about 8–10 minutes. Alternatively, boil the florets directly in salted water for 6–8 minutes until fork-tender. Drain thoroughly to remove excess water.
  2. Prepare the Base:
    In a skillet over medium heat, melt the butter and sauté the minced garlic for about 1 minute, until fragrant. Set aside.
  3. Blend Until Smooth:
    Transfer the cooked cauliflower to a food processor or blender. Add the sautéed garlic and butter, cream cheese, Parmesan cheese, and heavy cream. Blend until smooth and creamy. If you prefer a chunkier texture, mash by hand with a potato masher.
  4. Season to Taste:
    Season with salt and pepper to your preference. Blend or stir again to evenly distribute the seasoning.
  5. Serve Warm:
    Transfer to a serving dish and garnish with chopped parsley or chives if desired. Serve immediately as a side dish to your favorite keto meal.

Tip: For an extra cheesy twist, sprinkle some shredded cheddar on top and broil for 2–3 minutes until bubbly and golden. Enjoy!
