Ingredients:

  • 2 lbs chicken wings, split and tips removed
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 3 green onions, chopped
  • 1 Scotch bonnet or habanero pepper, seeded and chopped
  • 2 garlic cloves, minced
  • 1 tbsp fresh thyme leaves
  • 2 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tbsp brown sugar
  • 1/2 tsp ground nutmeg
  • 1 tsp black pepper
  • 1/2 tsp salt

Instructions:

  1. Make the marinade: In a blender or food processor, combine the olive oil, soy sauce, lime juice, green onions, Scotch bonnet pepper, garlic, thyme, allspice, cinnamon, ginger, brown sugar, nutmeg, black pepper, and salt. Blend until smooth.
  2. Marinate the wings: Place the chicken wings in a large bowl or resealable plastic bag. Pour the marinade over the wings and toss to coat. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  3. Preheat the oven or grill: Preheat your oven to 400°F (200°C) if baking, or preheat your grill to medium-high heat.
  4. Cook the wings:
    • For baking: Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the marinated wings on the rack and bake for 35-40 minutes, flipping halfway through, until the wings are crispy and cooked through.
    • For grilling: Grill the wings for 15-20 minutes, turning occasionally, until the wings are crispy and cooked through, with a slight char.
  5. Serve: Remove the wings from the oven or grill and let them rest for a few minutes. Serve hot with a cooling dip like ranch or blue cheese, or alongside traditional sides like rice and peas.

Enjoy these spicy, flavorful Jerk Chicken Wings, bursting with Caribbean zest!
