Jambalaya Soup

Ingredients

  • 1 lb smoked sausage (such as andouille), sliced
  • 1 lb boneless, skinless chicken thighs, diced
  • 1/2 lb shrimp, peeled and deveined
  • 1 onion, chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken broth
  • 1 cup long-grain rice
  • 2 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Green onions, sliced (for garnish)

Instructions

  1. Sauté the sausage and chicken: Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned, about 3-4 minutes. Remove the sausage and set aside. In the same pot, add the diced chicken and cook until browned and cooked through. Remove the chicken and set aside with the sausage.
  2. Sauté the vegetables: In the same pot, add the onion, green and red bell peppers, and garlic. Cook until softened, about 5 minutes.
  3. Add the broth and rice: Stir in the diced tomatoes, chicken broth, Cajun seasoning, smoked paprika, cayenne pepper (if using), and rice. Bring to a boil, then reduce the heat to low and simmer for 20 minutes, or until the rice is tender.
  4. Add the sausage, chicken, and shrimp: Return the cooked sausage and chicken to the pot, along with the shrimp. Cook for an additional 5-7 minutes, or until the shrimp are cooked through.
  5. Season and serve: Taste the soup and season with salt and pepper as needed. Garnish with fresh parsley and green onions before serving.
