Jamaican Jerk Marinade

Jamaican Jerk Marinade is a vibrant and fiery blend of spices, herbs, and aromatics, embodying the bold and authentic flavors of Caribbean cuisine. This traditional marinade has its roots in Jamaica and is known for its smoky, spicy, and slightly sweet notes. It uses ingredients like Scotch bonnet peppers, allspice, and fresh thyme to deliver a distinctively spicy and aromatic kick, balanced with hints of sweetness from brown sugar. Ingredients:

  • 3 Scotch bonnet peppers (or habanero peppers), seeds removed for less heat
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1-inch piece of fresh ginger, peeled and chopped
  • 3 tablespoons fresh thyme leaves
  • 3 green onions, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon allspice berries (or 2 teaspoons ground allspice)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • Juice of 2 limes
  • Juice of 1 orange

Instructions:

  1. Blend the Ingredients: In a food processor or blender, combine the Scotch bonnet peppers, onion, garlic, ginger, fresh thyme, green onions, soy sauce, olive oil, and brown sugar. Blend until smooth.
  2. Add the Spices: Add the allspice, cinnamon, nutmeg, black pepper, and salt to the blended mixture. Pulse until well combined.
  3. Finish with Citrus: Pour in the lime and orange juice, and blend for a few more seconds to incorporate the citrus juices into the marinade.
  4. Marinate the Meat: Place your desired protein (chicken, pork, or seafood) in a large zip-top bag or bowl. Pour the marinade over the meat, making sure it’s well coated. Marinate in the refrigerator for at least 4 hours, or overnight for best results.
  5. Cook and Enjoy: Grill the marinated meat on medium heat until fully cooked, or bake it in the oven at 375°F (190°C) until the internal temperature reaches a safe level for your chosen meat.
