Jalapeno Popper Stuffed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 4 oz cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 2-3 jalapeños, deseeded and finely chopped
  • 4 strips cooked bacon, crumbled
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup panko breadcrumbs (optional, for extra crunch)
  • 1 tbsp olive oil (optional, for browning)

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the filling: In a small bowl, mix the softened cream cheese, cheddar cheese, chopped jalapeños, crumbled bacon, garlic powder, onion powder, salt, and pepper until well combined.
  3. Prepare the chicken: Using a sharp knife, carefully cut a pocket into the side of each chicken breast without cutting all the way through.
