Jack-o’-lantern Stuffed Peppers

Ingredients:

  • 4 large orange bell peppers
  • 1 lb (450g) ground beef, turkey, or vegetarian alternative
  • 1 cup cooked rice (white, brown, or quinoa)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil, for sautéing

Instructions:

  1. Prepare the Peppers:
    Preheat your oven to 375°F (190°C). Slice off the tops of the bell peppers and remove the seeds and membranes inside. Using a small paring knife, carve Jack-o’-lantern faces into the sides of the peppers.
  2. Cook the Filling:
    Heat a drizzle of olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3 minutes. Stir in the garlic and cook for another minute.     Place the carved peppers upright in a baking dish. Spoon the filling mixture into each pepper, pressing down slightly to pack it in. Top each pepper with shredded cheese.

    Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
