ITALIAN SPAGHETTI SQUASH

Italian Spaghetti Squash is a delicious, low-carb alternative to traditional pasta dishes, featuring the classic flavors of Italian cuisine. Ingredients:

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions:

  1. Prepare the Squash: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the insides with olive oil and sprinkle with salt and pepper.
  2. Roast the Squash: Place the squash halves cut side down on a baking sheet lined with parchment paper. Roast for 35-40 minutes or until the flesh is tender and can easily be scraped into spaghetti-like strands with a fork.
  3. Make the Sauce: While the squash is roasting, heat 1 tablespoon of olive oil in a pan over medium heat. Sauté the diced onion and minced garlic until softened, about 3-4 minutes. Add the crushed tomatoes, oregano, basil, and red pepper flakes. Simmer for 10-15 minutes, stirring occasionally. Season with salt and pepper to taste.
  4. Assemble the Dish: Once the spaghetti squash is done, scrape the flesh into strands and place it in the squash shells or on plates. Top with the tomato sauce and sprinkle mozzarella cheese over each portion.
  5. Broil (Optional): If desired, place the squash under the broiler for 2-3 minutes until the cheese is melted and bubbly.
  6. Serve: Garnish with fresh basil leaves and serve immediately.
