Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt, or to taste

Instructions:

  1. In a small bowl or jar, whisk together the red wine vinegar, lemon juice, Dijon mustard, and minced garlic.
  2. Slowly drizzle in the olive oil while whisking continuously, or seal the jar and shake vigorously until the mixture is well combined.
  3. Add the dried oregano, basil, thyme, onion powder, salt, pepper, and sugar (if using). Stir or shake well to combine.
  4. If desired, stir in the grated Parmesan cheese for a richer flavor.
  5. Taste the dressing and adjust the seasonings as needed.
  6. Store in an airtight container in the refrigerator for up to a week. Shake well before each use.
