Ingredients:

  • 8 large eggs

  • 1 zucchini, thinly sliced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • ½ cup grated Parmesan cheese (or any cheese of your choice)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Whisk the Eggs: In a large bowl, whisk together the eggs, milk, Parmesan cheese, salt, and pepper until smooth. Set aside.
  3. Sauté the Vegetables: In an ovenproof skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for 2-3 minutes until softened. Add the zucchini, bell pepper, and cherry tomatoes, and cook for another 5-7 minutes until the vegetables are tender.
  4. Add the Eggs: Pour the egg mixture evenly over the sautéed vegetables in the skillet. Gently stir to combine the ingredients and evenly distribute the vegetables. Let the mixture cook on the stovetop for 2-3 minutes until the edges begin to set.
  5. Bake the Frittata: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is fully set in the center and slightly golden on top.
  6. Garnish and Serve: Remove the frittata from the oven and let it cool for a few minutes. Garnish with fresh basil or parsley, slice, and serve.
