  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 4 cups vegetable or chicken broth
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup kale or spinach, chopped
  • Salt and pepper to taste
  • Fresh parsley or Parmesan cheese for garnish (optional)

Instructions:

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.
  2. Add the Garlic and Herbs: Stir in the minced garlic, oregano, basil, thyme, and red pepper flakes (if using). Cook for another 1-2 minutes until fragrant.
  3. Add the Tomatoes and Broth: Pour in the diced tomatoes with their juice and the vegetable or chicken broth. Stir to combine and bring the mixture to a boil.
  4. Add the Beans and Simmer: Add the drained and rinsed cannellini and kidney beans to the pot. Reduce the heat to low and let the soup simmer for 20-25 minutes, allowing the flavors to meld.
  5. Add the Greens: Stir in the chopped kale or spinach and cook for an additional 5 minutes, until the greens are wilted and tender. Season with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and garnish with fresh parsley or a sprinkle of Parmesan cheese, if desired. Serve hot with crusty bread on the side.
