Irish Boxty

Irish Boxty is a traditional Irish potato pancake that combines both mashed and grated raw potatoes to create a wonderfully crispy exterior and a tender, soft interior. This versatile dish can be enjoyed as a breakfast item with eggs and bacon or as a savory side for lunch or dinner, often served with sour cream, chives, or smoked salmon. Boxty is beloved for its simple, rustic ingredients and comforting flavor, making it a perfect dish to celebrate Irish heritage or to enjoy any time you’re craving something hearty and satisfying.

Ingredients:

  • 2 medium russet potatoes, peeled and grated
  • 1 cup mashed potatoes (leftover or freshly made)
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • 1 tsp salt
  • 1 cup milk (or buttermilk for extra richness)
  • 1 large egg, beaten
  • Butter or oil for frying
  • Optional toppings: sour cream, chives, smoked salmon

Instructions:

  1. Prepare the Potatoes: Peel and grate the raw potatoes, then place them in a clean kitchen towel and squeeze out as much moisture as possible. Set aside.
  2. Make the Batter: In a large mixing bowl, combine the grated raw potatoes, mashed potatoes, flour, baking powder, and salt. Stir in the beaten egg and milk, mixing until the batter is smooth and well combined.
  3. Cook the Boxty: Heat a large skillet over medium heat and add a tablespoon of butter or oil. Scoop about ¼ cup of the potato batter into the skillet for each pancake, flattening them slightly with the back of a spoon. Fry for 3-4 minutes on each side, or until golden brown and crispy.
  4. Serve: Transfer the cooked boxty to a plate lined with paper towels to drain any excess oil. Serve warm with your favorite toppings such as sour cream, chives, or smoked salmon.

Enjoy these crispy, comforting Irish Boxty pancakes as a versatile and delicious addition to any meal!
