Iowa Enchiladas

Iowa Enchiladas offer a comforting, Midwestern twist on the classic Mexican dish. Ingredients:

  • 1 lb ground beef

  • 1 can (4 oz) diced green chilies
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the Ground Beef:
    • In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat. Stir in the garlic powder, cumin, salt, and black pepper, and remove from heat.
