INSTANT POT BLACK SOUP

Instant Pot Black Bean Soup is a hearty and comforting dish that comes together quickly, thanks to the magic of the Instant Pot. Ingredients:

  • 1 tablespoon lime juice
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Sauté the vegetables: Set the Instant Pot to sauté mode and add the olive oil. Once hot, add the diced onion, bell pepper, and garlic. Sauté for 3-4 minutes until the vegetables are softened and fragrant.
  2. Add the spices: Stir in the cumin, smoked paprika, chili powder, oregano, salt, and pepper. Cook for another minute to toast the spices and bring out their flavors.

  4. Pressure cook the soup: Secure the lid, set the valve to “sealing,” and cook on high pressure for 35 minutes. Once the cooking time is complete, let the pressure release naturally for 15 minutes, then manually release any remaining pressure.
  5. Finish and serve: Remove the bay leaf and stir in the lime juice. Use an immersion blender to partially blend the soup if you prefer a creamier texture, or leave it chunky. Adjust seasoning to taste.
  6. Garnish and enjoy: Ladle the soup into bowls and garnish with fresh cilantro. Add optional toppings like sour cream, avocado, shredded cheese, or tortilla chips for extra flavor and texture.
