Indian Spiced Sweet Potatoes

  • 3 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil (or coconut oil)

  • 1/4 teaspoon ground cinnamon

Instructions:

  1. Preheat the oven: Set your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Prepare the sweet potatoes: In a large mixing bowl, combine the cubed sweet potatoes with olive oil. Toss to coat evenly.
