Ingredients:

  • 6 hot cross buns, halved
  • 2 tablespoons unsalted butter, softened (for spreading)
  • 1/2 cup dried fruit (raisins, currants, or sultanas)
  • 3 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • Zest of 1 orange (optional, for extra flavor)
  • Powdered sugar, for dusting
  • Vanilla ice cream or custard (optional, for serving)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease a baking dish (about 8×8 inches) with butter or non-stick spray.
  2. Prepare the hot cross buns:
    • Slice the hot cross buns in half and spread the softened butter on the cut sides. Arrange the bun halves, buttered side up, in the greased baking dish. Sprinkle the dried fruit between and on top of the buns.
  3. Make the custard mixture:
    • In a medium bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, nutmeg (if using), and orange zest. Whisk until well combined.
  4. Assemble the pudding:
    • Pour the custard mixture evenly over the hot cross buns, making sure all the buns are soaked. Let the pudding sit for 10-15 minutes to allow the custard to absorb into the buns.
  5. Bake the pudding:
    • Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the custard is set and the top is golden brown.
  6. Serve:
    • Remove the hot cross bun pudding from the oven and let it cool for a few minutes. Dust with powdered sugar before serving. Serve warm with vanilla ice cream or custard for extra indulgence.
