Hot Cocoa Cookies Recipe

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • Optional: melted chocolate or crushed candy canes for garnish

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream butter and sugars: In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
  3. Mix dry ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Fold in chocolate chips and marshmallows: Stir in the chocolate chips until evenly distributed throughout the dough. Gently fold in the mini marshmallows, being careful not to overmix so they don’t melt into the dough too much.
  5. Shape and bake: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets about 2 inches apart. Bake for 8-10 minutes, or until the edges are set but the centers are still soft. Be sure not to overbake as you want the cookies to stay soft and chewy.
  6. Cool and garnish: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. For an extra indulgent touch, drizzle with melted chocolate or sprinkle crushed candy canes on top while the cookies are still warm.

These hot cocoa cookies are best enjoyed warm, but they can be stored in an airtight container at room temperature for up to 4 days. They’re perfect for holiday cookie platters or as a sweet winter snack!
