Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ¼ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 ½ cups chocolate chips or chunks
  • 1 cup mini marshmallows

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips and mini marshmallows.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 9-11 minutes, or until the edges are set and the centers are still soft. The marshmallows may puff and caramelize, adding to the gooey texture.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy your Hot Chocolate Cookies warm with a glass of milk or, for the full experience, a cup of hot cocoa!
