Honey Apple Cake is a wonderfully moist and fragrant dessert that captures the sweet, comforting flavors of fall. Made with fresh apples and sweetened with honey, this cake has a delightful balance of sweetness and spice. The apples provide a tender, juicy bite, while the honey adds a rich warmth that pairs beautifully with cinnamon and nutmeg. Perfect for an afternoon snack or a dessert for special occasions, this cake is best enjoyed warm, perhaps with a drizzle of honey or a scoop of vanilla ice cream.

- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup unsalted butter, softened
- 3/4 cup honey
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 2 cups peeled and chopped apples (Granny Smith or Honeycrisp)
- 1/4 cup chopped walnuts or pecans (optional)
Instructions:

- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream the softened butter and honey together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
- Fold in the chopped apples and, if using, the nuts.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely. Serve warm with a drizzle of honey or a dusting of powdered sugar. Enjoy!
