Honey Apple Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 2 cups peeled and chopped apples (Granny Smith or Honeycrisp)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream the softened butter and honey together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  5. Fold in the chopped apples and, if using, the nuts.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
