Homemade Wheat Thins

Crunchy, lightly sweet, and perfectly salty, Homemade Wheat Thins are a healthier and more flavorful alternative to store-bought crackers. Made with whole wheat flour and a touch of honey, these crackers are easy to make and perfect for snacking, pairing with cheese, or serving alongside dips. Baking your own wheat crackers allows you to control the ingredients, ensuring they’re free of unnecessary additives while delivering a wholesome and satisfying crunch.

Ingredients:

  • 1 ¼ cups whole wheat flour
  • 1 tablespoon sugar
  • ½ teaspoon salt (plus extra for topping)
  • ¼ teaspoon paprika (optional, for flavor)
  • 4 tablespoons unsalted butter, cold and cut into small pieces
  • ¼ cup water
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract (optional, for a subtle sweetness)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. Mix the Dry Ingredients: In a medium mixing bowl, whisk together the whole wheat flour, sugar, salt, and paprika (if using).
  3. Cut in the Butter: Add the cold butter pieces to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  4. Combine Wet Ingredients: In a small bowl, whisk together the water, honey, and vanilla extract (if using). Gradually pour the wet mixture into the dry ingredients, stirring until a dough forms. If the dough is too dry, add a teaspoon of water at a time until it comes together.
  5. Roll Out the Dough: Divide the dough in half. Roll out one portion between two pieces of parchment paper until it’s about 1/16 inch thick. Thin dough ensures crispy crackers.
  6. Cut and Transfer: Use a pizza cutter or sharp knife to cut the rolled-out dough into small squares or rectangles. Transfer the parchment with the cut dough onto one of the prepared baking sheets. Repeat with the remaining dough.
  7. Sprinkle with Salt: Lightly sprinkle the tops of the crackers with extra salt for flavor.
  8. Bake: Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Keep a close eye on them, as thin crackers can burn quickly.
  9. Cool and Store: Remove the crackers from the oven and let them cool completely on the baking sheets. They will crisp up further as they cool. Store in an airtight container for up to a week.

Homemade Wheat Thins are a simple, satisfying snack you can feel good about. Enjoy them plain, or pair with your favorite toppings for a versatile treat that’s great any time of day!
