HOMEMADE MARSHMALLOW FLUFF

Ingredients

  • 3 large egg whites, at room temperature
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Prepare a Double Boiler: Fill a saucepan with about 1-2 inches of water and bring it to a simmer. In a heatproof bowl, combine the egg whites, sugar, corn syrup, and cream of tartar. Place the bowl over the simmering water (making sure the bottom doesn’t touch the water) to create a double boiler.
  2. Whisk Over Heat: Using a hand mixer or a whisk, beat the egg white mixture constantly over the simmering water. Continue whisking for about 5-7 minutes, or until the mixture becomes thick, glossy, and reaches about 160°F (70°C). The sugar should be fully dissolved, and the egg whites will have increased in volume.
  3. Remove from Heat: Take the bowl off the heat and add the vanilla extract and a pinch of salt. Continue beating with the hand mixer on high speed for another 3-5 minutes, or until stiff peaks form. The marshmallow fluff should hold its shape and be smooth and glossy.
  4. Cool and Store: Let the marshmallow fluff cool to room temperature. Once cooled, transfer it to an airtight container and store in the refrigerator for up to two weeks.
