Ingredients:
- 3 cups old-fashioned rolled oats
- 1 cup chopped nuts (such as almonds, walnuts, or pecans)
- 1/2 cup seeds (like pumpkin seeds or sunflower seeds)
- 1/2 cup shredded unsweetened coconut
- 1/2 cup honey or maple syrup
- 1/4 cup melted coconut oil or vegetable oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup dried fruit (raisins, dried cranberries, or chopped apricots)
Instructions:
- Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- Mix the dry ingredients: In a large bowl, combine the oats, chopped nuts, seeds, shredded coconut, cinnamon, and salt.
- Add the wet ingredients: In a separate small bowl, whisk together the honey or maple syrup, melted coconut oil, and vanilla extract. Pour this mixture over the dry ingredients and stir until everything is evenly coated.
- Spread and bake: Spread the granola mixture evenly onto the prepared baking sheet. Bake in the preheated oven for 20–25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
- Cool and add dried fruit: Remove the baking sheet from the oven and let the granola cool completely. Once cooled, stir in the dried fruit.
- Store: Transfer the cooled granola to an airtight container. It will keep at room temperature for up to two weeks.
