The combination of fresh rosemary, thyme, and garlic infuses the pork with a burst of flavor, while a touch of Dijon mustard adds a hint of tanginess. The roast is cooked to perfection with a crisp, flavorful exterior and a tender, juicy center. This recipe is straightforward yet elegant, making it an ideal choice for both seasoned cooks and beginners alike.

Ingredients:

  • 3-4 pound pork sirloin roast
  • 2 tablespoons olive oil
  • 3 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup chicken broth

Instructions:

  1. Preheat Oven and Prepare Roast: Preheat your oven to 375°F (190°C). Pat the pork sirloin roast dry with paper towels and let it come to room temperature, about 30 minutes.
  2. Prepare Herb Mixture: In a small bowl, combine olive oil, Dijon mustard, minced garlic, rosemary, thyme, parsley, salt, pepper, and paprika. Mix until well combined.
  3. Season the Roast: Rub the herb mixture all over the pork roast, coating it evenly.
  4. Roast: Place the seasoned roast on a rack in a roasting pan. Insert a meat thermometer into the center of the roast. Roast in the preheated oven for 50-60 minutes, or until the thermometer reads 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  5. Rest the Roast: Remove the roast from the oven and transfer it to a cutting board. Tent loosely with foil and let it rest for 10-15 minutes to allow the juices to redistribute.
  6. Make the Pan Sauce (Optional): While the roast is resting, place the roasting pan on the stovetop over medium heat. Add the chicken broth, scraping up any browned bits from the pan. Simmer for 5 minutes, then strain if desired.
  7. Serve: Carve the roast into slices and serve with the pan sauce if using.

This Herb-Crusted Pork Sirloin Roast promises a delectable dining experience with its savory herb crust and tender, juicy pork. Enjoy it as a centerpiece for any meal that deserves a touch of sophistication!
