Ingredients:

  • 1 lb halibut fillets, cooked and flaked
  • 1/2 cup panko breadcrumbs

  • 1 egg, beaten

  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 2 green onions, finely chopped
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (for frying)
  • Lemon wedges, for serving

For the Lemon Aioli (optional):

  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Halibut Mixture:
    • In a large bowl, combine the flaked halibut, panko breadcrumbs, mayonnaise, beaten egg, Dijon mustard, lemon juice, chopped parsley, chives, and green onions. Mix gently until all ingredients are well incorporated. Season with salt and black pepper to taste. Cover and refrigerate for at least 30 minutes to help the mixture hold together.
  2. Form the Cakes:
    • Divide the chilled mixture into 8 equal portions. Shape each portion into a patty, about 3 inches in diameter and 1 inch thick. Set the patties on a plate and refrigerate for another 10-15 minutes to firm up.

    • In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, lemon zest, salt, and black pepper. Stir until well combined. Cover and refrigerate until ready to serve.
  4. Cook the Halibut Cakes:
    • Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the halibut cakes in batches, avoiding overcrowding the pan. Cook for 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
  5. Serve:
