Gyro Soup

Ingredients:

  • 1 lb ground lamb (or beef)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • Salt and pepper, to taste
  • 4 cups chicken or beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup uncooked orzo pasta
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh dill, chopped
  • 1 cup plain Greek yogurt
  • 1 lemon, juiced
  • Pita bread, for serving
  • Olive oil, for drizzling

Instructions:

  1. Cook the Meat: In a large pot, heat a tablespoon of olive oil over medium heat. Add the ground lamb or beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Sauté the Aromatics: Add the diced onion and minced garlic to the pot with the meat. Sauté until the onion is soft and translucent, about 5 minutes.
  3. Season: Stir in the cumin, oregano, coriander, smoked paprika, cinnamon, salt, and pepper. Cook for another 1-2 minutes until the spices are fragrant.
  4. Simmer: Pour in the broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes to allow the flavors to meld.
  5. Cook the Orzo: Stir in the orzo pasta and continue to simmer for another 10 minutes, or until the pasta is tender.
