GUINNESS CORNED BEEF AND CABBAGE

Guinness Corned Beef and Cabbage is a hearty, flavorful dish that’s perfect for celebrating St. Patrick’s Day or any time you want to enjoy a classic Irish-inspired meal. The corned beef is slowly simmered in Guinness beer along with traditional seasonings, resulting in tender, flavorful meat. Paired with cabbage, potatoes, and carrots, this dish is a complete meal that’s both comforting and satisfying.

Ingredients:

  • 3 to 4 pounds corned beef brisket (with spice packet)
  • 1 large onion, quartered
  • 3 cloves garlic, peeled and smashed
  • 4 cups beef broth
  • 1 bottle (11.2 ounces) Guinness stout (or another dark beer)
  • 2 tablespoons brown sugar
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • 1 pound baby potatoes, halved
  • 4 large carrots, peeled and cut into large chunks
  • 1 small head of cabbage, cut into wedges

Instructions:

  1. Prepare the Corned Beef:
    • Rinse the corned beef brisket under cold water to remove excess brine. Pat it dry with paper towels.
  2. Cook the Corned Beef:
    • Place the corned beef brisket in a large pot or Dutch oven. Add the quartered onion, smashed garlic, spice packet (included with the corned beef), beef broth, Guinness stout, brown sugar, peppercorns, and bay leaves.
    • Bring the mixture to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for about 2 1/2 to 3 hours, or until the corned beef is tender and easily pierced with a fork.
  3. Add the Vegetables:
    • After the corned beef has been cooking for about 2 hours, add the baby potatoes and carrots to the pot. Continue to simmer for another 30 minutes.
    • Add the cabbage wedges to the pot during the last 15 minutes of cooking, or until the cabbage is tender.
  4. Rest and Slice the Corned Beef:
    • Once the corned beef is tender, remove it from the pot and place it on a cutting board. Tent it with aluminum foil and let it rest for 10 minutes before slicing.
    • Slice the corned beef against the grain into thin slices.
  5. Serve:
    • Serve the sliced corned beef with the cooked cabbage, potatoes, and carrots. Spoon some of the cooking liquid over the top for extra flavor.
