GRILLED STUFFED PORTOBELLO MUSHROOM

Grilled Stuffed Portobello Mushrooms are a delicious, savory dish perfect for a vegetarian main course or a hearty side. The large, meaty mushroom caps are stuffed with a flavorful filling, such as a blend of cheeses, herbs, vegetables, or breadcrumbs, then grilled to perfection. Ingredients:

  • 4 large Portobello mushrooms
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup cherry tomatoes, chopped
  • 1/2 cup spinach, roughly chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon fresh basil or parsley, chopped
  • Salt and pepper, to taste
  • Balsamic glaze (optional, for serving)

Instructions:

  1. Prepare the mushrooms:
    • Gently clean the Portobello mushrooms with a damp paper towel. Remove the stems and use a spoon to carefully scrape out the gills inside the mushroom caps. Brush both sides of the mushrooms with olive oil and season with salt and pepper.
  2. Prepare the filling:
    • Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the garlic and cook for another minute.

  3. Stuff the mushrooms:
    • Spoon the filling evenly into each mushroom cap, pressing it down gently to fill the space.
  4. Grill the mushrooms:
    • Preheat your grill to medium-high heat. Place the stuffed mushrooms on the grill, stuffing side up. Cover and grill for 8-10 minutes, or until the mushrooms are tender and the filling is heated through and golden brown on top.
  5. Serve:
    • Remove from the grill and drizzle with balsamic glaze (optional) before serving. Serve hot as a main dish or side.
