Grilled Ratatouille

This Grilled Ratatouille takes the classic French vegetable medley and gives it a deliciously smoky twist. Ingredients:

  • 1 medium eggplant, sliced into rounds
  • 2 medium zucchini, sliced into rounds
  • 1 red bell pepper, cut into large chunks
  • 1 yellow bell pepper, cut into large chunks
  • 1 red onion, sliced thickly
  • 3-4 medium tomatoes, halved
  • 3-4 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • 1 tsp fresh rosemary, chopped (or ½ tsp dried rosemary)
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions:

  1. Prepare the Marinade: In a small bowl, whisk together olive oil, garlic, thyme, rosemary, salt, and pepper.
  2. Coat the Vegetables: Place all the sliced vegetables in a large bowl or tray. Drizzle the marinade over the vegetables, tossing them gently to coat.
  3. Grill the Vegetables: Preheat your grill to medium-high heat. Place the vegetables directly on the grill grates or use a grill basket to prevent smaller pieces from falling through. Grill each side for about 4-5 minutes or until they are tender and slightly charred.
  4. Assemble the Ratatouille: Once grilled, arrange the vegetables on a large platter, layering and mixing the colors for a beautiful presentation.
  5. Garnish and Serve: Top with fresh basil leaves for an extra burst of flavor and serve warm or at room temperature.
