Grilled Chicken Quesadillas

Grilled Chicken Quesadillas are a quick and delicious meal that’s perfect for lunch, dinner, or even a snack. Packed with tender grilled chicken, melted cheese, and flavorful spices, these quesadillas are both hearty and satisfying. The crispy tortillas add a delightful crunch, while the gooey cheese and savory chicken make each bite irresistible. Serve them with your favorite toppings like guacamole, salsa, or sour cream for a perfect Mexican-inspired dish that’s easy to customize and share.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup sliced onions (optional)
  • 1/2 cup sliced bell peppers (optional)
  • 2 tbsp butter, for cooking
  • Sour cream, guacamole, and salsa for serving

Instructions:

  1. Preheat your grill to medium-high heat. Rub the chicken breasts with olive oil, then season with chili powder, cumin, garlic powder, salt, and pepper.
  2. Grill the chicken for 5-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing into thin strips.
  3. In a skillet, sauté the onions and bell peppers (if using) until softened and slightly caramelized. Remove from heat and set aside.
  4. Assemble the quesadillas: On one half of each tortilla, layer some shredded cheese, grilled chicken strips, sautéed onions, and bell peppers. Fold the other half of the tortilla over to close.
  5. Cook the quesadillas: Heat a large skillet over medium heat and add a little butter. Cook each quesadilla for 2-3 minutes on each side, or until the tortilla is golden and the cheese is melted.
  6. Slice and serve: Cut the quesadillas into wedges and serve with sour cream, guacamole, and salsa. Enjoy!
