Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/2 cup sliced onions (optional)
- 1/2 cup sliced bell peppers (optional)
- 2 tbsp butter, for cooking
- Sour cream, guacamole, and salsa for serving
Instructions:
- Preheat your grill to medium-high heat. Rub the chicken breasts with olive oil, then season with chili powder, cumin, garlic powder, salt, and pepper.
- Grill the chicken for 5-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing into thin strips.
- In a skillet, sauté the onions and bell peppers (if using) until softened and slightly caramelized. Remove from heat and set aside.
- Assemble the quesadillas: On one half of each tortilla, layer some shredded cheese, grilled chicken strips, sautéed onions, and bell peppers. Fold the other half of the tortilla over to close.
- Cook the quesadillas: Heat a large skillet over medium heat and add a little butter. Cook each quesadilla for 2-3 minutes on each side, or until the tortilla is golden and the cheese is melted.
