Green Pea Soup

Ingredients:

  • 2 tbsp olive oil or butter
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 4 cups fresh or frozen peas
  • 3 cups vegetable or chicken broth
  • ½ cup heavy cream or coconut milk (optional)
  • 1 tsp fresh mint, chopped (optional)
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions:

  1. In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for 5 minutes, until softened.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the peas and broth. Bring to a boil, then reduce the heat and simmer for 10 minutes if using fresh peas, or 5 minutes for frozen peas, until the peas are tender.
  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches.
  5. Stir in the heavy cream or coconut milk, if using, and season with salt and pepper to taste. For a fresh twist, add chopped mint.
  6. Serve hot, garnished with fresh parsley or chives. If desired, refrigerate and serve chilled for a refreshing cold pea soup.
