GREEN GODDESS SANDWICH

Ingredients

For the Green Goddess Spread:

  • 1 tablespoon fresh chives, chopped

  • 4 slices whole-grain or sourdough bread, lightly toasted
  • 1/2 cucumber, thinly sliced
  • 1/2 ripe avocado, sliced
  • 1/2 cup baby spinach or mixed greens
  • 1/4 cup alfalfa sprouts (optional)
  • 1/4 cup feta cheese or goat cheese (optional)
  • Olive oil for drizzling (optional)

Instructions

  1. Make the Green Goddess Spread: In a small bowl, mash the avocado until smooth. Stir in the Greek yogurt (or mayonnaise), lemon juice, parsley, basil, chives, and minced garlic. Mix well until smooth and creamy. Season with salt and pepper to taste.
  2. Assemble the Sandwich: Spread a generous layer of the Green Goddess spread on two slices of toasted bread.
