Ingredients:

  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 can (15 oz) green enchilada sauce
  • 2 cans (4 oz each) diced green chiles
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional, for serving)
  • Lime wedges (optional, for serving)

Instructions:

  1. Sear the Pork: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the pork cubes in batches, searing on all sides until browned. Remove the pork and set aside.
  2. Cook the Aromatics: In the same pot, add the diced onion and cook for about 5 minutes, until softened. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  3. Build the Chili: Return the seared pork to the pot. Stir in the green enchilada sauce, diced green chiles, white beans, pinto beans, chicken broth, cumin, coriander, oregano, and smoked paprika. Stir to combine.
  4. Simmer: Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the pork is tender and the flavors have melded together. Stir occasionally.
  5. Season: Taste the chili and adjust seasoning with salt and pepper as needed.
  6. Serve: Ladle the chili into bowls. Garnish with chopped fresh cilantro and, if desired, a dollop of sour cream and a squeeze of lime juice. Serve with tortilla chips or warm tortillas on the side.

Enjoy the warm and tangy flavors of this Green Enchilada Pork Chili!
