  • Salt and black pepper, to taste
  • 1/2 cup panko breadcrumbs (optional, for topping)
  • 2 tbsp butter (for topping, optional)

Instructions:

  1. Cook the Pasta: Cook the macaroni or pasta according to package directions until al dente. Drain and set aside, reserving a cup of pasta cooking water.
  2. Make the Cheese Sauce: In a large saucepan, melt the 2 tbsp butter over medium heat. Add the flour and whisk to create a roux, cooking for 1-2 minutes until the mixture is bubbly and golden. Gradually pour in the milk and cream, whisking constantly to avoid lumps. Cook, stirring occasionally, until the sauce thickens, about 5-7 minutes.
  3. Add the Cheese and Spices: Once the sauce has thickened, reduce the heat to low and stir in the shredded cheddar and Monterey Jack cheeses. Continue stirring until the cheese is melted and the sauce is smooth. Add the garlic powder, onion powder, cayenne pepper (if using), and season with salt and pepper to taste.
