Greek Omelette

Ingredients:

  • 4 large eggs
  • 1/4 cup milk
  • 1/4 cup crumbled feta cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup fresh spinach, chopped
  • 2 tbsp red onion, finely chopped
  • 2 tbsp kalamata olives, sliced
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Prepare the Ingredients: In a small bowl, whisk together the eggs, milk, oregano, salt, and pepper until smooth. Set aside. Chop the vegetables and prepare the feta and olives.
  2. Cook the Vegetables: Heat the olive oil in a non-stick skillet over medium heat. Add the red onion and sauté for 2-3 minutes, until softened. Add the tomatoes and spinach, cooking for another 2 minutes until the spinach wilts slightly. Remove the vegetables from the pan and set aside.
  3. Cook the Omelette: Pour the egg mixture into the same skillet and cook over medium-low heat. Let the eggs set for about 1-2 minutes, then use a spatula to gently lift the edges to allow uncooked egg to flow underneath.
  4. Add the Filling: Once the eggs are mostly set but still slightly runny on top, add the sautéed vegetables, feta, and olives on one half of the omelette.
  5. Fold and Finish: Carefully fold the omelette in half and cook for another 1-2 minutes, allowing the cheese to melt slightly and the eggs to finish cooking.
  6. Serve: Slide the omelette onto a plate, garnish with fresh parsley if desired, and serve hot.
