Grape Cake

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1/4 tsp salt

  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1 1/2 cups seedless grapes (red or green)
  • 2 tbsp granulated sugar (for topping)
  • Powdered sugar (optional, for dusting)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream the butter and sugar: In a large bowl, beat the softened butter and 3/4 cup of sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined.
  5. Fold in the grapes: Gently fold about 1 cup of the grapes into the batter. Pour the batter into the prepared cake pan and spread it evenly.
  6. Top with grapes: Scatter the remaining 1/2 cup of grapes on top of the batter, pressing them slightly into the surface. Sprinkle the 2 tablespoons of sugar over the top.
  7. Bake: Bake for 40-45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Serve: Dust the cake with powdered sugar before serving, if desired.
