Grain-free Granola Bars

Grain-free Granola Bars are a delicious and wholesome alternative to traditional granola bars, perfect for those following a grain-free diet or anyone looking for a nutritious snack. These bars are packed with nuts, seeds, and dried fruits, bound together with natural sweeteners like honey or maple syrup, and enriched with the subtle flavor of vanilla. The inclusion of coconut oil adds a silky texture and a hint of tropical flair. These granola bars offer a satisfying crunch and are ideal for a quick breakfast, a post-workout snack, or a healthy treat throughout the day.

Ingredients:

  • 1 cup raw mixed nuts (such as almonds, walnuts, and pecans), roughly chopped
  • 1 cup seeds (such as pumpkin seeds and sunflower seeds)
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup dried fruits (such as cranberries or cherries)
  • 1/3 cup coconut oil
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cinnamon (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and spread the nuts and seeds evenly across it. Toast in the oven for 10-12 minutes, stirring once halfway through, until they are lightly golden and fragrant.
  2. Reduce oven temperature to 300°F (150°C).
  3. Prepare the syrup: In a small saucepan over medium-low heat, combine the coconut oil, honey (or maple syrup), and vanilla extract. Stir until the mixture is well combined and just begins to bubble. Remove from heat.
  4. Combine the dry ingredients: In a large bowl, mix together the toasted nuts, seeds, shredded coconut, dried fruits, sea salt, and cinnamon if using.
  5. Add the syrup: Pour the warm syrup mixture over the dry ingredients and stir until everything is evenly coated.
  6. Press into a pan: Line an 8-inch square baking pan with parchment paper, allowing some overhang on the sides for easy removal. Transfer the mixture to the pan and press it down firmly with the back of a spoon or the bottom of a measuring cup to ensure it is compacted.
  7. Bake the granola mixture: Place the pan in the oven and bake for 20-25 minutes, or until the edges are lightly browned.
  8. Cool completely: Allow the granola bars to cool in the pan on a wire rack. Once cooled, use the overhanging parchment to lift the bars from the pan and place them on a cutting board. Cut into bars or squares.
  9. Store: Keep the bars in an airtight container at room temperature for up to two weeks or in the refrigerator for longer storage.
