GLUTEN FREE CHICKEN MARSALA

Gluten-Free Chicken Marsala is a delicious and elegant dish that pairs tender chicken breasts with a rich, savory Marsala wine and mushroom sauce. By using gluten-free flour, this version of the classic Italian recipe maintains all the flavors and textures without compromising dietary needs. The combination of juicy chicken, earthy mushrooms, and the slightly sweet Marsala sauce creates a balanced, restaurant-quality meal that’s perfect for a special dinner or a quick weeknight treat. Serve it with gluten-free pasta, mashed potatoes, or a side of vegetables for a satisfying and flavorful meal.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup gluten-free flour (such as rice flour or a gluten-free blend)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 oz mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1/2 cup gluten-free chicken broth
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the chicken: Place the chicken breasts between two pieces of plastic wrap and pound them to about 1/2-inch thickness. Season both sides with salt, pepper, and garlic powder. Dredge the chicken in gluten-free flour, shaking off the excess.
  2. Cook the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  3. Sauté the mushrooms: In the same skillet, add the remaining tablespoon of olive oil and the butter. Once the butter is melted, add the sliced mushrooms and cook for 5-6 minutes until browned and tender.
  4. Make the sauce: Pour the Marsala wine into the skillet, scraping up any browned bits from the bottom. Add the chicken broth and thyme, and bring the mixture to a simmer. Let the sauce reduce for about 5-7 minutes until it thickens slightly.
  5. Return the chicken: Add the cooked chicken breasts back into the skillet, spooning the sauce and mushrooms over the top. Cook for another 2-3 minutes to heat through and absorb the flavors.
  6. Serve: Garnish with fresh parsley and serve with your choice of gluten-free sides.

This Gluten-Free Chicken Marsala is a flavorful, easy-to-make dish that brings the classic flavors of the traditional recipe to your table, minus the gluten!
