Instructions:

  1. Activate the yeast: In a small bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for 5-10 minutes, or until the yeast becomes foamy and activated.
  2. Prepare the dough: In a large mixing bowl, whisk together the gluten-free flour, psyllium husk (if using), and salt. In a separate bowl, beat the eggs, olive oil, and apple cider vinegar until well combined.
  3. Mix the wet and dry ingredients: Pour the yeast mixture and the egg mixture into the bowl with the dry ingredients. Using a hand mixer or stand mixer fitted with a paddle attachment, mix on medium speed for about 2-3 minutes until the dough is smooth and slightly sticky. If the dough is too dry, add an extra tablespoon of warm water.
  4. Let the dough rise: Grease a 9×5-inch loaf pan with oil or nonstick spray. Transfer the dough to the pan and smooth the top with a spatula. Cover the pan loosely with plastic wrap or a clean towel and let the dough rise in a warm place for about 45 minutes to 1 hour, or until it has doubled in size.
