Gluten-Free Apple Pie

Ingredients

For the Crust:

  • 2 ½ cups gluten-free all-purpose flour (with xanthan gum included)
  • 1 tsp salt
  • 1 tbsp sugar

  • 6-8 tbsp ice water

For the Filling:

  • 6 medium apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • ½ cup granulated sugar
  • 2 tbsp gluten-free all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice
  • 1 tbsp lemon juice
  • 2 tbsp honey or maple syrup

For Assembly:

  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (optional)

Instructions

  1. Prepare the Crust:
    • In a large bowl, mix the gluten-free flour, salt, and sugar.
    • Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Add ice water, one tablespoon at a time, mixing just until the dough comes together. Divide into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Prepare the Filling:
    • In a large bowl, combine the sliced apples, sugar, gluten-free flour, cinnamon, nutmeg, allspice, lemon juice, and honey or maple syrup. Toss until the apples are evenly coated.
  3. Assemble the Pie:
    • Preheat the oven to 375°F (190°C).
    • Roll out one disk of dough on a floured surface (using gluten-free flour) and fit it into a 9-inch pie dish. Trim excess dough, leaving a slight overhang.
    • Pour the apple filling into the crust, spreading it evenly.
    • Roll out the second disk of dough and place it over the filling. Trim, seal, and crimp the edges. Cut a few slits in the top crust for ventilation.
    • Brush the top crust with beaten egg and sprinkle with coarse sugar if desired.
  4. Bake the Pie:
    • Place the pie on a baking sheet to catch any drips and bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
    • Allow the pie to cool for at least 2 hours before slicing to let the filling set.
