GLAMORGAN SAUSAGES

Glamorgan Sausages are a delightful vegetarian twist on traditional sausage, originating from Wales. These flavorful sausages are made from a mixture of Welsh cheese, breadcrumbs, and a medley of aromatic herbs and spices, offering a savory bite that’s both hearty and satisfying. Often enjoyed as a snack or light meal, they can be served with a side of tangy mustard or a fresh salad for a complete dish. The crispy exterior contrasts beautifully with the soft, cheesy interior, making Glamorgan Sausages a perfect addition to any gathering or as a comforting treat at home.

Ingredients

  • 1 cup breadcrumbs
  • 1 cup grated Caerphilly cheese (or any mild cheese)
  • 1/2 cup grated cheddar cheese
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh chives
  • 1 tsp Dijon mustard
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1/4 cup milk (or enough to bind the mixture)
  • 1 cup all-purpose flour (for coating)
  • 2 eggs, beaten (for coating)
  • 1 cup breadcrumbs (for coating)
  • Vegetable oil, for frying

Instructions

  1. Prepare the Mixture: In a large mixing bowl, combine the breadcrumbs, grated Caerphilly cheese, grated cheddar cheese, parsley, chives, Dijon mustard, smoked paprika, salt, and pepper. Mix well.
  2. Add Milk: Gradually add the milk to the mixture until it is just moist enough to hold together but not too wet. You should be able to form the mixture into sausage shapes.
  3. Shape the Sausages: Divide the mixture into equal portions and shape each portion into a sausage or log.
  4. Coat the Sausages: Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Roll each sausage in flour, dip it in the beaten eggs, and then coat it in breadcrumbs, pressing gently to ensure they stick.
  5. Fry the Sausages: In a large frying pan, heat vegetable oil over medium heat. Fry the sausages in batches for about 4-5 minutes on each side or until golden brown and crispy.
  6. Drain and Serve: Remove the sausages from the pan and drain on paper towels. Serve warm with your favorite dipping sauce, such as mustard or a fresh salad.

Glamorgan Sausages are a delicious vegetarian option that captures the essence of traditional Welsh cuisine, offering a flavorful and satisfying treat that everyone can enjoy!
