Gingerbread Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 3/4 cup hot water

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a large bowl, whisk the melted butter and brown sugar together until smooth. Add the molasses and egg, and mix until combined.
  4. Gradually stir in the dry ingredients, alternating with the hot water, beginning and ending with the dry ingredients. Mix until smooth and well combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
