Ginger Spice Cookies

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground ginger

  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar (plus extra for rolling)
  • 1/4 cup dark brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt until well combined.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
  4. Add the molasses, egg, and vanilla extract to the butter mixture, beating until smooth and fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.
  6. Place some granulated sugar in a small bowl. Scoop tablespoon-sized portions of dough, roll them into balls, and roll each ball in the sugar to coat.
  7. Arrange the dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10–12 minutes or until the edges are set and slightly crispy. The centers may still look soft; they’ll firm up as they cool.
  9. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
