Giant Lemon Sugar Cookies

Ingredients:

  • 2 ¾ cups all-purpose flour

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, using an electric mixer, beat the softened butter and 1 ½ cups of sugar together until light and fluffy, about 3 minutes.
  4. Add the egg to the butter mixture and beat until fully incorporated. Mix in the vanilla extract, lemon zest, and lemon juice.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. The dough will be slightly sticky.
  6. Scoop out large balls of dough, about 2-3 tablespoons each, and roll them in the remaining ¼ cup of granulated sugar. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
